I am Amanda Martin-Shaver, a New Zealander, living in Nebraska,
(recently relocated from Wyoming January 2006).
I am looking forward to sharing my recipes with you that I prepared back
in NZ.
I have always been a scratch cook, making recipes from books
and experimenting. Quite a few of my cooking for meals and baking
I have not acually followed a recipe to the letter.
Since I have been in Oregon I have noticed that some of the ingredients
that NZ call are named something different here in America.
It has been funny but sometimes frustrating asking at the grocers
for a specific product. A couple of examples that come to mind which
are easy ones, is in NZ we call powered sugar, icing sugar. Bournvita,
Milo and custard Powder. NZ has marmite and vegemite which of course
is un-heard of here, but to 'Kiwi's', is as popular as peanut butter is to
'Yanks'. I have not found an alternative for them yet. *S*
I only have one cake and no biscuits (cookies as you call them)
I have found it quite hard because of the different flour (I reckon)
consistency (or perhaps just different hemisphere, after all I did live
at the bottom of the world - more 'downunder' than Australian)
and except for the banana cake my other cakes have been flops.
The cookies have not been anything to write home about either, so I am
leaving those until I can get them right for publication!

Because I am giving recipes that could and I am hoping, different.
I have typed in more explanation than the recipe says.
Please I am not trying to insult anyones intellegence, I am trying to
make the recipes easier to follow.*S*
