CAKES
Banana Cake
6 oz (real) butter softened
3/4 cup sugar
2 eggs
2 over ripe bananas - the blacker and over ripe the better
2 cups plain flour
2 tablespoons hot milk
1 teaspoon baking powder
1 teaspoon baking soda
Method
Beat butter and sugar together until creamy, add eggs one at a time beating well after each addition.
Add mashed bananas and mix thoroughly. Stir baking soda into the hot milk,
(this will froth up) and pour into creamed mixture.
Add flour and baking powder and mix altogether..
Turn mixture into greased cake tin and bake approximately 50 minutes in
moderate oven (350oF) or until cake springs back when lightly touched.
Leave in tin for about 10 minutes before turning out onto a wire rack.
Frost with chocolate icing.
VARIATIONS
The mixture can be baked in two cake sandwich tins at 350o for approximately
25 minutes.
Mock Cream Filling
2 tablespoons butter
2 tablespoons sugar
2 tablespoons hot water
Beat together until creamed. Apply creamed mixture to one of the two cakes,
chocolate frost the other.
Place together one on top of the other to form double layer cake.
Excellent tasting to use whipped cream and sliced banana as another alternative.
