Hot Puddings

Self Saucing Chocolate Pudding

100g (2oz) butter
1 1/4 cups flour
1/2 cup sugar
1 tsp Baking Powder
1 egg
1 tbsp Cocoa

1 cup sugar
1 tsp cocoa
1 cup water


Cream butter and sugar together, add egg next Add flour, BP and cocoa mix altogether until smooth.
Spoon into greased ovenware dish. Sprinkle the (sauce) over the top. - Sugar and cocoa and water.
Bake moderate oven 35 - 40 minutes.

Plum Duff (Boiled in a cloth)

4 0Z Butter melted
1 cup brown sugar
1 tsp BP
1 cup raisins or saltanas, or currents
1 tsp Cinnamon
1 tsp spice
Cold china tea or coffee


Put large saucepan of water on to boil.
Mix Butter and sugar together, add the raisins, cinnamon and spice.
Pour in the cold tea or coffee to mix enough liquid for sticky consistancy.
sprinkle flour onto the cloth (I use old flour bag or a thin cotton
dish towel)and scoup out the mixture into the middle
with flour sprinkled over the top and roll the mixture that it is covered
with flour. Tie the top of the bag with enough room for the mixture to
expand as it cooks. Place into the boiling water and turn down the element
to simmer for approx 1 hour.


2-3 tbsp corn flour (cornstarch)
1/2 cup sugar
2 cups milk
1 tsp cinnamon

In a saucepan add the cornstarch/flour and slowly add the milk and cinnamon
over medium heat stirring ocassionaly, once mixture starts to boil add the
sugar and stir constantly as it thickens. Cook for a few minutes.

Milk Puddings

1 - 2 cups Macaroni
1 cup sugar
1 - 2 eggs
1 - 2 pints of milk

Pour dry macaroni into pyrex / oven dish.
In a bowl, beat eggs, sugar and milk together and pour over the macaroni.
Sprinkle nutmeg, or all spice if so desired. Bake in 350 degrees oven for about an hour check and see if macaroni has absorbed all the milk and they are softened as you may need to add a bit more milk (some macaroni brands absorb more milk than others) if you do, take the skin off and add more milk gently mixing in. Cook for further time. Serve hot/warm with milk / cream poured over, ice-cream..

Rice Pudding
1 - 2 cups Rice
1 - 2 pints milk

Pour rice into pyrex or bakeware dish and pour about a pint milk over, stir to wet all the rice. Bake at 350o for about an hour, which should have swelled the rice and absorbed the milk. Take out and remove the skin, add the other pint of milk, return to oven and bake further until rice is soften and golden brown skin developed.
Serve and eat hot with milk, ice-cream, chocolate chips etc etc..
