Hot Puddings
My mother use to make a pudding or dessert every day while we were growing up
I carried on this tradition with my own family as it was always a nice treat after the
the main meal, the children loved them as much as I did
Self Saucing Chocolate Pudding
100g (2oz) butter
1 1/4 cups flour
1/2 cup sugar
1 tsp Baking Powder
1 egg
1 tbsp Cocoa
1 tsp Vanilla Essence
Chocolate Sauce
1 cup sugar
1 tsp cocoa
1 cup water
Method
Cream butter and sugar together, add egg and vanilla
Add flour, BP and cocoa mix altogether until smooth.
Put into greased ovenware dish. Sprinkle sauce mixture over the top,
Pour water over and Bake moderate oven 35 - 40 minutes.
Plum Duff (Boiled in a cloth)
4 0Z Butter melted
1 cup brown sugar
1 tsp BP
1 cup raisins or saltanas, or currents
1 tsp Cinnamon
1 tsp spice
Cold china tea or coffee
Method
Put large saucepan of water on to boil.
Mix Butter and sugar together, add the raisins, cinnamon and spice.
Pour in the cold tea or coffee to mix enough liquid for sticky consistancy.
sprinkle flour onto the cloth (I use old flour bag or a thin cotton dish towel)
pour out the mixture into the middle of cloth and sprinkle flour over the top
and roll the mixture to cover with flour.
Tie the top of the bag with enough room for the mixture to expand as it cooks.
Place into the boiling water and turn down the element (burner) to simmer for
1 1/2 hour.
Cinnamon Sauce
2-3 tbsp corn flour (cornstarch)
1/2 cup sugar
2 cups milk
1 tsp cinnamon
In a saucepan add the cornstarch and slowly add the milk and cinnamon
over medium heat stirring ocassionaly, once mixture starts to boil add the
sugar and stir constantly as it thickens. Cook for a few minutes.
Rice Milk Pudding (same receipe and method for Tapioca, Sago and Semolina -
American readers, NZ has 3 sizes Tapioca is large and often nicknamed 'frogs eyes' sago is
the size of Tapioca found in the States and Semolina is about the size of Grits)
I have used this receipe to make 'Grits Milk Pudding', my husband whom is from the south,
North Carolina, where Grits is a favourite loves the way I make it this way too, and still adds
butter!
1 cup rice
1/2 pint milk
Method
1/2 cup sugar
1/2 pint milk
In baking dish pour rice and milk, bake in oven mod heat approx 3/4 to
an hour
Pull skin off, mix the rice mixture and add milk and sugar, return to the oven
and bake until golden brown.
Alternative:
Add saltana's, or raisens or currents
Macaroni Milk Pudding
1 cup macaroni
1/2 pint milk
2 eggs
1/2 cup sugar
Method
Beat eggs, sugar and milk together
In baking dish, pour maccaroni, milk, eggs and sugar
Bake in mod oven (350o) for approx 1 hour
Egg Custard
1/2 pint milk
2 eggs
1/2 cup sugar
Method
Beat eggs, sugar and milk together
Sprinkle nutmeg and bake 350o for approx 30 minutes
Eaten hot or cold with fruit
